Dairy Free Low Fat Pumpkin Pie

1 1/2 pkgs. Mori-Nu Lite Ex-Firm Tofu 1 tsp vanilla
2 cups canned or cooked pumpkin 1 unbaked pie crust
1 tbsp Pumpkin pie spice 2/3 cups honey

  1. Drain tofu and blend in a food processor or blender until smooth. Add remaining ingredients and blend well. Pour into a 9in unbaked piecrust.
  2. Bake in a pre-heated oven for approximately 1 hour.
  3. Filling will be soft, but will firm up as it chills.
  4. Chill & Serve.
