|Dairy Free Low Fat Pumpkin Pie
| 1 1/2 pkgs. Mori-Nu Lite Ex-Firm Tofu
||1 tsp vanilla
| 2 cups canned or cooked pumpkin
|| 1 unbaked pie crust
| 1 tbsp Pumpkin pie spice
|| 2/3 cups honey
- Drain tofu and blend in a food processor or blender until smooth. Add remaining ingredients and blend well. Pour into a 9in unbaked piecrust.
- Bake in a pre-heated oven for approximately 1 hour.
- Filling will be soft, but will firm up as it chills.
- Chill & Serve.
