Yield: 6 Burgers

3/4 cup boiling water 2 tbsp. soy sauce
1 cup textured vegetable protein granules
1/4 cup chopped onion 1/4 cup ketchup
1/4 cup chopped green pepper 1/4 tsp black pepper
1 clove minced garlic 1 tbsp. olive oil
1/2 lb firm tofu, mashed 1 tbsp. dijon mustard
1/2 cup w.w. flour  

  1. Mix together the boiling water and soy sauce. Pour over TVP, cover and let stand for 10 minutes.
  2. Mix together onion, green pepper and garlic in microwave safe boil, cover and microwave on high for 1 minute.
  3. Mix all ingredients together and form into 6 burgers. Oil a non-stick griddle with the olive oil and brown the burgers on both sides. Let cool for a few minutes to firm up. Serve on toasted buns with all the fixings.
