Baked Biscuits with Almond Oil
|
| 3 Eggs | 4 T Sucanat (Cane Juice Sugar) |
| 4 T almond oil | 4 T sweet white wine |
| 1 C whole wheat flour | 1 t baking powder |
| Pinch of sea salt | 1 T butter |
| Nutmeg, freshly grated |   |
- This light sweet-tooth delicacy goes well with an afternoon coffee, or served with vanilla ice cream and fresh strawberries.
- Preheat oven to 400 deg.
- For biscotti: In a large bowl, beat eggs & sugar using a hand mixer. Stir in oil and wine, then sift in flour, baking powder and salt.
- Mix until the dough is smooth. Pour the dough into a butter-greased spring-form pan and bake for 35-40 min.
- Cool for 5 minutes then slice. For a real treat, sprinkle lightly with freshly grated nutmeg and serve warm.
- For Cookies: follow above directions and spoon cookie balls from dough. Bake 35-40 minutes
