Dairy Free Low Fat Pumpkin Pie
- 1 1/2 pkgs. Mori-Nu Lite Ex-Firm Tofu
- 1 tsp vanilla
- 2 cups canned or cooked pumpkin
- 1 unbaked pie crust
- 1 unbaked pie crust
- 1 tbsp Pumpkin pie spice
- 2/3 cups honey
- 1 tbsp Pumpkin pie spice
- 2/3 cups honey
Drain tofu and blend in a food processor or blender until smooth.
Add remaining ingredients and blend well.
Pour into a 9in unbaked piecrust.
Bake in a pre-heated oven for approximately 1 hour.
Filling will be soft, but will firm up as it chills.
Chill & Serve.
