| 3/4 cup of honey |
1/2 tsp salt |
| 1 cup pumpkin puree |
1 tsp cinnamon |
| 1/2 cup oil |
1/2 tsp nutmeg |
| 1 tsp vanilla |
1/4 tsp ginger |
| 2 cups flour |
1 cup raisins (optional) |
| 1/4 cup soy flour |
1/2 cup chopped nuts |
| 2 1/2 tsp baking powder |

- Preheat oven to 350 degrees.
- Mix honey, pumpkin, oil, and vanilla in a bowl.
- In a separate bowl combine dry ingredients; add to pumpkin mix.
- Stir in raisins and nuts.
- Drop by spoonfuls onto oiled cookie sheet. Bake for 12 to 15 minutes.
