Refried Amaranth
| 2 tsp. Sesame Oil | 1 clove garlic minced |
| 1 green onion minced | 1/4 cup red pepper diced |
| 1 small zucchini diced | 1 cup cooked Amaranth |
| Tamari to taste | |
- Heat a skillet over medium heat and add oil. Add garlic, green onion, zucchini and red pepper one at a time and cook until they are sealed and soft.
- Mix cooked amaranth gently into the vegetables. Cook 5 minutes.
- Season to taste with tamari before serviing.
- Serve hot. Amaranth and vegetables make a complete meall accompany with a raw vegetable salad or relish.
