Refried Amaranth



2 tsp. Sesame Oil 1 clove garlic minced
1 green onion minced 1/4 cup red pepper diced
1 small zucchini diced 1 cup cooked Amaranth
Tamari to taste  


  1. Heat a skillet over medium heat and add oil. Add garlic, green onion, zucchini and red pepper one at a time and cook until they are sealed and soft.
  2. Mix cooked amaranth gently into the vegetables. Cook 5 minutes.
  3. Season to taste with tamari before serviing.
  4. Serve hot. Amaranth and vegetables make a complete meall accompany with a raw vegetable salad or relish.
